Avocado and Chickpea Garbanzo Mole

Call it Garbanzo-Mole or Gauca-Hummus, my party style dip is healthy combination of Hummus and Guacamole in one. I love it because this makes my dip-chip loving family consume less avocado (because they will finish bowls if they hear Avocado :) ). Leaves no-doubt, my family members are avocado lovers.

This dip was an attempt to have good portion of good carbs from chickpeas with good fats of avocado.

I don’t say avocados are bad for you. In-fact, these are loaded with good fats. But too much of any kind of fats is not good for health. Addition of chickpeas not only gave my otherwise called “guacamole” depth of flavor, but also made it healthy and filling.

Final product is very satisfying. Filling rice and bread crumb patty, with healthy dose of spinach, garlic, and zing from goat cheese. My favorite thing about this burger is aroma fusion of garlic and oregano. Oh!! mouthwatering every time.

Penne Rosa in Tomato-Cream Wine Sauce

These days, I often use store bought Marinara Sauce (mostly Costco Marinara – Pack of Two) or Tomato Basil Sauce to make this recipe. However, in India, I even make this sauce at home from scratch, starting from blanching tomatoes in hot bath. :)

Well, for today, I will just stick to Pasta Recipe with Wine and Tomato Sauce and a promise to share my tomato-basil marinara some other time.

St. Patrick’s Day Breakfast Crepes – Gluten Free and Delicious

St. Patrick’s day is approaching and I thought to share with you my favorite breakfast for St. Patrick’s Day. Lentil Crepes with zesty jalapeno and fresh cilantro is my take on going green. These kid-friendly, gluten free and egg-free crepes are delicious and healthy way to start a good go-green morning.
