Welcome to the stories of recipe making, dish breaking, cookie burning, fingers cutting and pots boiling-over world of ChefDeHome’s Test Kitchen.
For a long time, I wanted to use ChefDeHome Test Kitchen for the purpose I created it initially for – i.e. sharing ChefDeHome’s TEST kitchen adventures. But, ChefDeHome.com takes so much of my time and attention that posting about food and recipe tests and experiments never gets time.
I am sort of starting with the experiment posts from today. Idea is, I will post the test recipe and experiment gone wrong/right here and actual recipe will still go to ChefDeHome.com.

Today’s recipe is Cirtus and Chive Gougeres!
Gougère is a French term, used to describe chox dough savory pastry usually made with cheese (often with Gruyère Cheese).
I had this pastry in mind but I not wanted to make it with Gruyère cheese. I decided to experiment with cheddar for my first attempt. Chox dough is very sensitive. A little too dry or little too wet can result in disaster.
I have made chox dough before and usually I end up making it on dryer side. While making first batch of Gougère, I was very careful not to make dry dough or Gougère will crack at the top and my recipe effort will go waste. So I made the dough with 1/2 egg plus 1.5 tbsp water extra than my original recipe.
While placing the dough on cookie sheet for baking, I was noticing that it is little flatter than expected but I had no choice and I decided to go for it.
As I thought, Gougeres came out flat. They had nice air pockets as expected from chox pastry but they were flat.
Second Attempt – I made only 1/2 the batch and skipped the 1/2 egg ( about 1 tbsp egg) which I added earlier. This batch came out good but I couldn’t take any pictures. Actually, I had no plans to start posting about my experiments here!
Third Attempt – I made full batch and skipped the 1/2 egg. Also I decided to skip 0.5 tbsp water this time as well (no particularly reason, just gut feeling!). I felt chox pastry still had room to be more fluffy.
This attempt was golden!! Gougeres came out fluffy, with huge air pockets and lite like a cloud!! You can see for yourself!

I knew nothing about photography in general… forget food photography. When I started working on ChefDeHome recipes, I made mistakes, discarded recipes just because I couldn’t shoot the recipe pictures well. In past 4 years, ChefDeHome website and recipes I worked on have given me lots of learning lessons about food and food photography (and worth to mention – food blogging).
Recently, I decided to share with my blogger friends all what I know.
I felt, I can share my skills and experiences about blogging with you all. May be one of my bloggers friends will saved from learning all from scratch. To start with, I am sharing with you - 12 important tips that I’ve learned about food photography.

- Natural light is the key to make food look good and inviting!
- Shooting at night can be tricky. Using camera flash does not give good result always
- Shoot at various angles but straight angles.
- Light from side windows (one side good, two side best) is always nice.
- Food looks great in white or light colored plates.
- Fill up the photo frame with food.
- Don’t Fill frame too much that food is hard to recognize.
- Action speaks louder than words.
- Too much blur is NOT good!!
- One tone food does not look good
